It's one of those things ...I absolutely agree! It's one of those things that seems crazy until you do it, and it's not much work at all. I've tried to really make a point of always making my own stock. I've been meaning to really cook it down someday and freeze it as ice cubes of concentrated flavor (to save space in the freezer) but so far not yet. My only dislike in the process is cleaning my mesh strainer afterwards.
