Guinness Cupcakes with Chocolate Whiskey Filling and Bailey's Frosting (Carbomb Cupcake)

When someone does something nice for you, you should make them cupcakes.  When someone does a lot of really nice things for you or just one giant nice thing (in this case it's both) you should make them Irish Carbomb cupcakes.  (Isn't that a known fact? I thought it was.)

When I first read about these cupcakes on Smitten Kitchen's Blog, I knew I had to make them but the question became when?  I felt that a cupcake of such awesome magnitude begs to be made for a special occasion and when one of my friends did a bunch of favors for me, I thought thanking him via booze filled cupcake would be perfect.

I will say, if you're planning to make these, I do have a couple of recommendations.  The first one being that these babies take a long time to make.  Granted, I was cooking things up from my small kitchen and I only had 12 plastic cupcake liners (this recipe makes 24 so that added an extra step) but there was also a lot of cooling time involved and my chocolate whiskey ganache would not, for whatever reason, get thick.  It took an ice bath, a lot of patience (and maybe a couple of frantic tweets on Twitter to my go-to-baker pal Jen) and just as I thought there was no hope, the ganache hardened into a perfectly smooth creamy texture.  Overall, I'm not sure I'd make these again.  Maybe.  But it would have to be another special occasion to warrant them.  They were quite tasty once everything was all said and done but in my opinion, these take way too long to make and I don't think I have enough patience to make these often.

  2. oh God these sound amazing! Intimidating though, as time is a luxury I no longer have. Maybe I'll just make regular cupcakes while drinking whiskey.

  6. I think I'd end up drunk before the cupcakes came out of the oven. I mean, with Guinness, Baileys and some whiskey, all on the counter, I'd be done before the cupcakes!

  9. Nice work sticking with it. I think when I made them, I did it across a couple days so maybe I didn't notice how labor intensive they are... Now that two people have complained about the ganache though, I think I'm going to have to make it again to see what's up with that.

  11. I have actually had these before - they are so yummy, but I did hear from the baker that they were a lot of work and very time consuming! Your look lovely with the addition of the blue sprinkles!

  12. You had me at 'Bailey's'. Yum! Ganache is a finicky thing. I once made a double layer cake covered in ganache and it was A MESS! Room temp, too thin, refrigerate, too thick. Ugh! But you did an absolutely fantastic job. Your cupcakes are beautiful. And delicious, too, I bet! =)
