Bacon Fig and Rosemary Pizza

A big pet peeve of mine is wasting food.  There are so many reasons why this is something that bothers me (wasting money, starving people in China, etc) so tonight when my stomach started growling, I tasked myself with a challenge: make a completely different (and of course delicious) dinner using up random bits and pieces left over from the previous night's dinners.  After all, who doesn't love a good challenge?  I know I do.  And, truth be told, I often find that the best meals that I make are the ones that just sort of come together on the fly and that is certainly the case in this little recipe creation of mine.

Starting with naan bread (all natural, unprocessed naan bread!  Thanks Trader Joe's!) I pulled out some leftover fig jam from the sandwich I made last week as well as some bacon bits and chives that I had used for my twice-baked potatoes last night.  Of course I had cheese on hand so I took that out as well.  This was one of those meals where everything just came together almost instantly and not only was this an easy little dinner to make, it was so (SO) good!  The saltiness and crispness of the bacon paired so well with the sweet and cinnamony  fig jam.  I found myself polishing this off quickly and wanting more.  It seems this little random creation will be making it's way into a permanent spot of my pizza rotation.  It was just that good!

Bacon Fig and Rosemary Pizza

- 1 piece of naan bread
- A couple of dollops of Fig Jam (or Dalmatia fig spread)
- Bits of Fresh Mozz., enough to lightly cover the surface of the pizza
- About a tbs of Bacon bits
- Fresh chives
- A couple pinches of dried rosemary

Start by heating the naan bread in the oven at 400 just until it crisps up a bit.  Top with little dollops of fig spread, rosemary and cheese.  Bake until the cheese melts.  Top with bacon and bake for another couple of minutes.  Top with fresh chives just before serving.

PS Currently making twice baked as your last post inspired me. I have no bacon or chives but these babies will be loaded with other fixins!

Not bad for an impromptu supper. I didn't think I liked figs but - turns out - they are fab and I am hooked!
