Lately it seems I've been getting a lot of requests for easy take-to-work lunches that are healthy and cost effective. Ever on my own personal quest to make quick and satisfying lunch options, I thought I'd share one of my staples. A regular to my lunch rotation, this combination of crunchy cool cucumbers and smooth boursin cheese, encased in a whole grain pita.
The cucumber is a regular star of my work-time lunches mainly because it travels so well and I love crunch and coolness that it brings. I created this recipe, like most of my dishes, based upon what I had in my fridge. I particularly like this lunch-time dish because it requires a little assembly which makes me pause midway through the day to create. (Any excuse to do anything cooking related throughout the day, I suppose.) I also love the versatility of this and take full advantage. Sometimes I'll throw in some little grape tomatoes or a handful of fresh baby spinach or arugula. The options are endless and it's a great way to clean out the fridge and get rid of bits and pieces of leftovers. As mentioned before, it is very important to not assemble this the night before. You'll end up with a soggy mess otherwise. Instead, I wrap up my pita in saran wrap and stick my veggies (cleaned and pre-cut) into a sandwich bag. I chose boursin because Laughing Cow packages them up into cute little wedges, making it easier to travel. In short, if you're looking for a quick and cheap lunch that is satisfying, this is a great way to go.
