Peachy-Keen


Is it just me or does peach season make you think about that song from the 90's by the Presidents of the United States of America?  As I type this post, I'm humming along to their song that was about, you guessed it, peaches.  If you have no idea what I am talking about, please don't tell me.  You'll just make me feel old.


I love peaches and appreciate their versatility.  They can sweet as in a cobbler for example or they can be savory and make a nice little accompaniment to some pork or a salad.  I had seen beautiful looking peaches on sale and wanted to get a little adventurous and try my hand at peach salsa.  This was super easy to make and something that can be used in so many ways.  The obvious being to dip a tortilla chip in, but also, this would make a great addition to some grilled meats, or even on op of some melted cheese and crusty bread.  Yum.  This is a perfect little summertime treat.


Fresh Peach Salsa
- 2 peached, peeled and finely chopped
- 1 jalepeno pepper (you can chose to leave the seeds in for extra heat or take them out, your call)
- 1/2 red onion, finely diced
- 1 ear of corn, cooked, kernels removed
- The juice of 1 lime
- A couple pinches of smoked paprika
- Salt and pepper to taste

Instructions: it really cannot get any easier, toss it all into a bowl and serve chilled or room temperature.  You can also make this up a day or two in advance and keep chilled until you are ready to serve.

Apple is my favorite fruit. We know that eat an apple a day keep a doctor away. It is a nice recipe of Fresh Peach Salsa. Its looks so tasty.
